87 Sussex Brings French-Inspired Fine Dining to Jersey City

87 Sussex in Jersey City offers a French-inspired fine dining experience built around local ingredients and chef-driven dishes.

Executive Chef Brian Walter leads the kitchen with a focus on classical technique and presentation. Signature dishes include a lobster cocktail, braised short rib with demi-glace, and the restaurant’s most distinctive offering: quail egg ravioli served over braised oxtail, a dish Walter says is exclusive to 87 Sussex. A truffle potato dish finished in 24-karat gold rounds out the menu’s more theatrical offerings.

“Each dish kind of tells a story of my journey as a chef,” Walter said. “You’re expecting fine dining when you’re coming here so you want it to look pretty and you want to see the lobster and caviar and truffles. And that’s what we deliver.”

The menu also features an Atlantic halibut served with a blueberry sauce. The cocktail program and wine selection are also available, along with a dessert menu.

“I wanted to show my love of not only French food and French cooking, but also our local ingredients,” Walter said.
